2004 Cabernet Sauvignon SYV

Aged over 3 years in French Oak barrels partially new and some 3 year old neutral barrels. These grapes came from the Plam Vineyard in Solvang where intense heat ripens the grapes to perfection and complexity. On the nose it is pure cabernet with toasty oak, chocolate and a beefy undertone. Upon the taste is a great compliment of Bing Cherries, with some seed tannin to compliment dark blackberry and smoky nuances. Silkiness and softened grape tannins make for a pleasurable finish. Pairs very well with grilled rack of lamb, Brazilian Sea bass and for desert: Ollalieberry pie. Will cellar for 6-8 years.
